Now, let’s make a quick lentil soup to fill your stomach and your head with hair.



4 oz. lentils, uncooked

1 tsp vegetable oil (any cooking oil will do)

4 c. vegetable broth (any combination of water and vegetable bouillon cubes)

2 tsp lemon juice (optional)

1 stalk celery

2 carrots, peeled and diced

2 tbsp. fresh onions, diced

2 tbsp. fresh green pepper, diced

1 large can whole tomatoes

1 bay leaf

1 tsp. salt

1 tsp. pepper

1 tsp. oregano


In a large pan, sauté onions, celery and carrots in oil for 3-5 minutes until onions become transparent. Add the broth, tomatoes, lentils, oregano and bay leaf. Salt and pepper to taste. (Add more as needed). Reduce heat to a simmer. Cover the pan until the vegetables cook for 40-45 minutes. Take out the bay leaf and add lemon juice, then serve. Lemon juice brings out the flavours of the soup.
